hello weekend & food


Winter is still mild but we are expecting a snowstorm to blast through tonight.  I missed the snow this year but I'm kind of over it now and want spring to come.  What about you?

My studio's a mess.  Here's the only somewhat clean corner.  I'm working on an update that is slowly taking shape.

 

As I'm typing this, I think I hear a mouse.  He must have heard about the snowstorm also.  Old lady kitty will be coming out this afternoon for a visit.  At 15, she's still a good mouser.

Our local grocery store had avocados for .39 cents a piece this week!  Since you can only eat so much guacamole, plus I'm trying to watch my carb intake, no chips :( , I went looking for recipes.  This one from Cheeky Kitchen we LOVED.  (I changed it slightly).  Lydia even took leftovers for lunch!




Creamy Avocado Chicken Salad

1 cup chicken breast, cooked and shredded
3 avocados, diced
1/4 cup corn
1/4 cup black beans, rinsed and drained
1/4 cup green onions, chopped
1/4 cup tomatoes, diced
1/4 cup cilantro, chopped, I had to use Trader Jo's frozen cilantro in cubes ~ worked well
1/4 cup corn chips, crushed
2 tbsp vinegar (preferably white)
1/2 lime, juiced
4 tbsp mayonnaise
salt to taste
tortilllas (optional) Again with the Trader Jo's but they have fantastic low carb tortillas, just sayin'

In medium bowl, toss chicken, avocados, corn, black beans, green onions, tomatoes, cilantro, and corn chips together.  In another bowl mix the vinegar, lime juice, and mayonnaise together.  Add this to the chicken mixture.  Salt to taste.  Spoon into tortillas and wrap, or into bowl and eat with fork.  Delicious!!

Hello my Rabbit loving friend :) This wrap looks yummy! I dont eat meat, but when i did I would have nomed this down. I dont think we'll have snow here its too mild. I cannot believe that "spring" seems to be here. Many flowers are up and some trees are blooming. I also have a "messy" studio..Glad I'm not the only one ;)

Mmmm..this looks yummy! I will have to give it a try!

I'm still hoping for at least one big storm before it is all over, but I'm not holding my breath for it..it just doesn't seem in the cards this year.
